Strawberry Rhubarb Spritzer

featuredThis recipe was inspired by something I had at Chez Panisse a few weeks back, and falls into the category of slightly more interesting (I hope) drinks for adults who want something other than the usual stuff to sip on at parties and dinners. Strawberry Rhubarb Spritzer (makes a little over a pint, about 8 servings)

8 oz. (230g) fresh strawberries, the sweeter the better
4 oz. (115g) about 1 stalk, rhubarb
6 Tbsps. (90ml) sugar
1 cup (240ml) water


Add everything to a saucepan. Bring to a simmer and cook for 20 minutes. Let cool and purée until smooth. You can strain the mixture if you don’t like pulp, but I like to leave it in.

I use 2-4 tablespoons (30-60ml) of syrup per glass, and add about 1 cup (240ml) of sparkling water. I like to pour it over crushed ice.

If you make this ahead of time, give the syrup a good stir as the pulp will separate from the rest.
